Last Night's Dinner ... Quinoa with Carmelized Onions & Roasted Tomatoes

After watching the bachelor last night while on the elliptical {yes, it totally makes you feel less guilty about watching it!}, I ran home to make a quick, but super delicious dinner. I pulled together the below quinoa {sans lemon & parsley- thought it might like some brightness and color after the fact}, and it was divine!

DIRECTIONS
  • Preheat the oven to 350 degrees and slice onion really thin lengthwise and once in half
  • Place tomatoes on a baking sheet and roast for 30 min
  • Meanwhile, add olive oil to the skillet and cook onions on high heat for approx. 5 min. Reduce heat, add 1/2 tablespoon of butter, salt and sugar. Cook down onions on low heat until brown for 15-20 min, making sure to scrap the brown bits off the bottom frequently.
  • Combine quinoa and liquid in pot and bring to a boil, reduce heat and cover. Cook until liquid has absorbed - approx. 10-15 min.
  • Add roasted tomatoes, 1/2 tablespoon butter, onions and Parmesan to the quinoa.
  • Season with salt as needed. Give a fresh squeeze of lemon to the mixture and top with some chopped parsley for color.
I'm taking the leftovers to lunch this week. Could be served as a side or the main dish next to some grilled veggies - like asparagus. I will be making this again!

As for the bachelor, I think half of them have already gone crazy - especially that Blakeley chick. Wow ... My favorite is for sure Rachel for her normalcy, incredible style and fabulous raspy voice!
